Hakata style Free-range chicken Mizutaki
This is our specialty dish. The chicken soup stock we use is
from 60 Kagoshima's Satsuma free-range chicken, one of the three major free-range chicken,
cooked every day for over 18 hours in a large pot.
We remove the scum carefully, adding clear water from a special purifier many times.
Chicken soup stock will gradually melt to the bones and all will become a soup.
The white soup stock has all the well-balanced nutrition of the chicken,
with full of collagen, so it is good for your smooth skin.
At GINJISHI, we study the soup for improvement every night.
We cannot always use the same free-range chicken because the bone structure is a bit different each season.
So the flavor and taste may be different. We acknowledge that the taste of soup which
changes each season is the good thing about free-range chicken.
