Large intestine (miso sauce __salt sauce) - great dish especially if you don't like the fat. Delicious and delightfully firm.
Deluxe rumen (miso sauce __salt sauce) - deluxe rumen with fat sandwiched between the flesh. Also called a rumen sandwich. The rich fatty flavor and texture make a delicious combination - you'll be surprised just how good rumen can be!
